Wild Morel & Caramelized Onion

A deeply earthy, gourmet pizza built around one of spring’s most prized wild ingredients – the morel mushroom. With its honeycomb texture and rich umami depth, the morel pairs beautifully with the slow-cooked sweetness of caramelized onions, creating a topping duo that feels both rustic and refined.

This pizza is perfect for dinner parties, romantic evenings, or any occasion that calls for something a little out of the ordinary. A finishing drizzle of truffle oil takes it from excellent to unforgettable – and pairs wonderfully with a glass of Pinot Noir.

What You Need

  • 1 Mystic Margherita Pizza base
  • 100g fresh morel mushrooms, cleaned and halved
  • 1 large yellow onion, thinly sliced
  • 1 tbsp olive oil + 1 tbsp butter (for caramelizing)
  • ½ cup shredded fontina cheese
  • 2 tbsp grated Parmesan
  • 1 tbsp fresh thyme leaves
  • Salt & black pepper to taste

Instructions

In a skillet over medium-low heat, cook the sliced onions with butter and a pinch of salt for 20–25 minutes, stirring occasionally, until golden and jammy. In the same pan, sauté the morels in olive oil for 5–7 minutes until tender; season with salt and pepper. Spread the caramelized onions over the defrosted Mystic Margherita base, then layer on the morels. Scatter fontina, Parmesan, and fresh thyme on top. Bake for 4-6 minutes until the crust is golden and cheese is bubbling.
